Microwave Tortilla Chips

Microwave Tortilla Chips

Ingredients

  • one or more 6-inch corn tortillas
  • juice of one lime
  • non-stick olive oil or canola oil spray
  • sea salt or coarse salt

Instructions

  1. Cut the tortilla(s) into 8 wedges (cut first into 4 quarters, then cut each quarter in half).
  2. Lightly spray a large plate with non-stick spray.
  3. Lay the wedges out in a single layer on the plate.
  4. Spray fresh lime juice on the chips (you can use a little atomizer that you can buy at the drug store for a few dollars).Spray oil on the chips.Sprinkle sea salt on the chips
  5. Microwave on high for one minute.
  6. Carefully flip the wedges (they will be hot) and microwave again for one minute.
  7. Carefully flip again (the plate gets SUPER HOT) and microwave in increments of 30 seconds until crispy. NOTE: Sometimes it takes 5-10 seconds after it comes out of the microwave for it to fully crisp because the steam is still evaporating.

Tex-Mex Naan Pizzas

Tex-Mex Naan Pizzas

Celebrate three cuisines in one great recipe:Indian (the naan), Mexican (the toppings), and Italian (the pizza genre). It's fast, easy, and fun to make. Try it soon!

Ingredients

  • 1 package Stonefire Tandoori Naan, Original Variety
  • black bean & corn salsa (I like Newman's Own)
  • 6-8 ounces grated Mexican blend cheese
  • Avacodo Sauce (optional)
  • 1/2 avocado
  • 2 tablespoons sour cream
  • 1 tablespoon lime juice

Instructions

  1. Spread a layer of salsa over both Naan (bubbly side up). Sprinkle each Naan first with the cheese, then with the black beans, and finally the corn.
  2. Place naan on middle rack of preheated 400 F oven and heat 10 to 15 minutes, or until cheese melts and crust is golden brown.
  3. Meanwhile, for the Avacodo Sauce, smash the avocado with the sour cream and lime juice to make a paste.
  4. Just before serving, top off the pizzas with dollops of the sauce and serve any leftover sauce alongside.

Notes

Choose either the Cilantro Sauce or the Avacodo Sauce. It just depends on your personal preference! If you prefer, you can skip the sauce.

Frozen Chocolate-Covered Bananas

Ingredients

  • 4 large ripe bananas, peeled and cut into thirds crosswise
  • 3/4 cup semisweet or bittersweet chocolate chips
  • 1/4 cup shredded coconut

Instructions

  1. Line a baking sheet with parchment or wax paper.
  2. To melt chocolate, microwave on medium for 1 minute. Stir, then continue microwaving on medium, stirring every 20 seconds, until melted.
  3. Insert a popsicle stick into each piece of banana. Cover each piece with melted chocolate using a rubber spatula and sprinkle with coconut. (Reheat chocolate, as needed, to keep it melted.)
  4. Place the bananas on the baking sheet and freeze until frozen, about 2 hours.

Salted Chocolate Dipped Mandarin Slices

Ingredients

  • 5 mandarin oranges
  • 1/2 cup semi-sweet chocolate or dark chocolate chips
  • sea salt or coarse salt

Instructions

  1. Line a baking sheet with parchment or wax paper and set aside.
  2. Peel the mandarin oranges.
  3. To melt chocolate, microwave on medium for 1 minute. Stir, then continue microwaving on medium, stirring every 20 seconds, until melted.
  4. Dip each slice halfway into the melted chocolate and place on prepared baking sheet. Sprinkle with salt and repeat until all slices are evenly coated and sprinkled with salt.
  5. Refrigerate for 10 minutes or until chocolate has hardened.

Notes

Salted Chocolate Covered Mandarin Slices will keep up to 2 days in an airtight container or storage bag in the fridge. Adapted from foodnetwork.

      Hi Lyle, Yes! Chocolate covered fruit is fabulous! We have a local chocolate shop does does great chocolate covered fruit – chocolate on dried pineapple, orange peel, etc.

      I have to put in a very good word for the Tex-Mex Naan Pizza. I’ve made it several times, and can confirm – it’s very good, also quick and easy/
